Meal Prep Chicken Burrito Bowls

Hi Guys!!! I really hope you like this recipe as much as I do!!! It's so easy, convenient and delicious!!!  


Ingredients: *** The ingredients amount may vary depending on your serving size***
Serving Size: 2 containers 
  • 2 chicken breasts, shredded
  • 1 cup of rice ( you can use the rice of your choice, I used brown rice)
  • Seasonings of your choice 
  • Half of a pepper
  • Half of an onion 
  • 1 cup of corn 
  • Half of lime 
  • Sprinkle of mozzarella cheese or the cheese of your choice 
  • Chips (optional)
Directions:
  1. Start by, making your rice ( follow the directions as the packaging says) 
  2. Once done, add to your containers
  3. Then, start cooking your chicken by either grilling it or cooking it in a skillet/pan and add your favorite seasonings 
  4. Once, your chicken is done cooking- shred your chicken with two forks and divide the chicken up between the two containers
  5. Chop up your pepper and onion halves and add it to the skillet/pan (***By adding the peppers and onions to the pan after you cooked the chicken, is a method known as "deglazing." The flavors will extract, which will make this dish even more delicious!!!)
  6. Add some oil and seasonings of your choice to the pan with the peppers and onions 
  7. Cook your peppers and onions until tender and then divide the peppers and onions up amongst the two containers
  8. Finally, cook your corn in the same skillet/pan and add your favorite seasonings and cook until tender
  9. Once done, divide your corn up between the two containers and add desired toppings to your containers
  10. Enjoy!
