"Crack" Broccoli Appetizer

Ever looking for a quick and easy appetizer to throw together for last minute guests... well I've got the perfect appetizer for you to make!!! Keep reading to find out the recipe for this quick and easy appetizer!!!







Ingredients:
  • 1 to 1/2 pounds of broccoli crowns ( I used frozen broccoli because that's all I had in the house)
  • 1/4 cup olive oil
  • 4 garlic cloves ( I used freeze dried garlic cloves) 
  • Large pinch of red pepper flakes
  • 1/2 teaspoon kosher salt
  • 3 tsp sliced almonds (with or without skin)
  • 2 teaspoons freshly squeezed lemon juice
  • 2-3 tablespoons freshly grated pecorino cheese ( I used a mixture of parmesan cheese and mozzarella cheese because I didn't have pecorino cheese in the house at that moment)
  • Zest of half a lemon




















Directions:
  1. Preheat your oven to 475 degrees ( This will ensure that your broccoli florets get crispy and caramelized) *** If you want less crispy broccoli florets, you can reduce the cooking time and turn your oven down 10 to 15 degrees***
  2. Line a sheet pan with foil
  3. In a large bowl, combine the olive oil, garlic and red pepper flakes and whisk together 
  4. Add in your broccoli florets and lightly toss until evenly coated 
  5. Spread across your lined sheet pan and sprinkle with salt
  6. Roast your broccoli for 10 to 12 minutes, remove from oven and flip the broccoli
  7. Sprinkle your sliced almonds evenly across the sheet pan and roast for an additional 8 to 10 minutes or until your broccoli is evenly caramelized, tender and your almonds are toasted and golden brown
  8. Once done, transfer the broccoli to a plate or platter and toss gently with lemon juice and top with pecorino cheese or the cheese of your choice 
  9. Garnish with fresh lemon zest 
  10. Enjoy!
