Copycat Benihana Chicken Fried Rice

Hi Guys!!! Happy Saturday!!! If you haven't been to the restaurant Benihana's yet, I highly recommend that you go. It's a little pricey but SO worth it!!! I unfortunately only get to go a couple of times a year but when I do, boy do I savior every moment!!! Their food is excellent and the show they put on while cooking your food right in front of you is AMAZING!!! My mouth is watering just thinking about it!!! However, if you cannot afford going to Benihana's, then you can make Benihana's food right in your own kitchen!!!

Copycat Benihana's Chicken Fried Rice
 Serves: 4
Ingredients:
  • 1 tablespoon sunflower oil ( I used canola oil and it worked just fine)
  • 2-3 boneless, skinless chicken breasts( cut into cubes)
  • Salt,to taste
  • Pepper, to taste
  • 2 tablespoons garlic butter( see ingredients below)
  • 3 eggs
  • 1 cup onions, diced
  • 1/4 cup carrots, diced
  • 1/4 cup green onions, thinly sliced
  • 2 cups white rice
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame seeds
Ingredients for the garlic butter:
  •  2 tablespoons butter
  •  Sprinkle of garlic powder or garlic cloves ( Taste to see if the butter is garlicy enough or to your liking.)
Directions:
  1. Add oil to skillet and set to medium heat
  2. Season chicken with salt and pepper
  3. Cook the chicken in the skillet until lightly-browned, and cooked all the way through ( Stir Occasionally)
  4. Add the garlic butter
  5. Stir to coat the chicken and then set aside
  6. Using, the same pan cook the onions, carrots and green onions until softened and set aside
  7. Wipe out the pan and scramble the eggs( season raw egg with salt and pepper to taste)
  8. Add the rice, soy sauce, sesame seeds, chicken, carrots, onions, and green onions into the pan
  9. Cook until the rice is warm and browned
  10. Serve hot

***Fried rice tastes better when made from day-old steamed rice***
