Greek Potatoes's- Week 18

The recipe I chose for this week is something that is quick, easy and they taste really great !!!! So let's dive right in!!!!

Ingredients:
  • 4 or 5 pounds of potatoes( I used russet potatoes and I just used a few potatoes since it was just for me)
  • 1 lemon( I used lemon juice)
  • 1/4 cup of olive oil
  • 1/4 cup of butter, melted
  • 1 and 1/2 cup teaspoons of salt
  • 1 teaspoon of oregano
  • 1 teaspoon of garlic powder ( I am not a big garlic fan so I sprinkled a little in and it was more than enough for me, but feel free to add a teaspoon of garlic if you like garlic)
  • 1 and 1/2 cups of chicken broth ( I used chicken bouillon cubes and water)
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of paprika, plus more for topping
  • 1/4 cup of parsley ( You can use fresh or dried , I used dried and this ingredient is also optional)
Directions:
  1. Wash and peel potatoes, then place in a single layer in a baking pan ( This recipe suggests you use a 13x9 or a 15x10 baking pan but I used one that fit my serving of potatoes in)*** Use as many potatoes that you need to fill your pan***
  2. Cut potatoes in half lengthwise and place in large bowl, set aside
  3. Zest the lemon and place zest in the refrigerator to use later
  4. Juice the lemon the pour the juice over the potatoes
  5. Add olive oil , butter , salt , oregano, garlic, pepper and paprika to potatoes and mix well
  6. Add potato mixture to your baking pan
  7. Slowly pour in your broth into the pan ( try not to pour it over the potatoes, so you don't knock the seasonings off)( It's better to pour it on the sides)
  8. Dust potatoes with a little additional paprika
  9. Cover pan tightly with aluminum foil and bake at 375 for 40 minutes
  10. Remove the foil after 40 minutes and continue to bake for an additional 30-40 minutes or until the potatoes are just tender.
  11. Take the potatoes out of the oven and let rest for 15 minutes with the foil back on the pan again.
  12. To serve, remove foil and sprinkle potatoes with lemon zest and parsley
